LUNCH INSPIRATION: Fried Fish and Yam Chips

Ingredients for the sauce:

  • Fish
  • Cayenne (Sombo)
  • Vegetable oil
  • Scotch bonnet (ata rodo)
  • Onions
  • Garlic
  • Green pepper
  • Sweet Chili sauce
  • Fish stock
  • Fish seasoning

Instruction:

Peel, wash, slice and fry the yam. Put it aside. Then,

1. Wash and dry the fish. Slash the fish in about 4 places(this depends on the size of the fish) on both sides and season with fish seasoning. Fry and set aside.

2. Slice onions. Roughly blend(without water) the Cayenne, scotch bonnet, onions and garlic. Cut the green pepper into thin strips.

3. Heat some veg oil. Add the sliced onions and allow to fry till fragrant. Add the blended pepper mix and fry. When ready, add the chilli sauce and fish stock. Taste and add more fish stock if needed. Add a little water if thick. Allow to simmer for about 2 mins. Add the green pepper. Let cook for about a minute and turn off the heat. Pour on the fish and serve while hot.
