Lunch inspiration: Beef curry and rice.

Learn how to make this Asian inspired beef stew.Ingredients:

800g Beef With Bones diced into Chunks

1/4 Cup Coconut/ Vegetable Oil

1 Cup Chopped Onions

2Cups Chopped Potatoes

100g Natural/Plain Yoghurt

5 Cloves

1Teaspoon Turmeric Powder

1Teaspoon Black Pepper

2 Cups Chopped Carrots

1/2 Teaspoon Ground Cinnamon

3 Cardamom pods

1/2 Teaspoon Black Ground Pepper

1 Teaspoon Coriander Powder

1 Teaspoon Chilli Powder

2 Tablespoons Minced Ginger

1 Tablespoon Minced Garlic

1 Teaspoon Cumin Powder

Handful Chopped Spring Onions

2 Red Chillis, Chopped

2 Bay leaves

Salt to Taste

Preparation:

Pour the oil into a wok or pan and place on medium heat. When the oil heats up, add the bay leaves, Cinnamon Powder, Black Pepper, Cardamon pods and Cloves. Stir and add the chopped Onions. Saute till the Onions are a bit brown. Then add the Beef to the mixture and saute for a minute.

Now, add the Minced Garlic and Ginger, the Coriander powder, Turmeric, Cumin powder, Chilli powder and Salt to taste.

Stir and add the Yoghurt.

Leave to cook  for 30 minutes. Be sure to stir every now and then to prevent burning. Add 1 Cup of water if the moisture dries up too quickly.

Then after 30 minutes, add the chopped carrots and Potatoes. Cover and cook for a further 40-50 minutes on low heat…Then add the Spring Onions and Peppers…Stir and leave to cook for another 4 minutes. Your Beef Curry is ready…

Serve and enjoy.
